Parmigiana di melanzane - Eggplant parmigiana

Per preparare il sugo di pomodoro ho utilizzato l'insaporitore per salsa di pomodoro di ARIOSTO. Ho trovato molto comodo utilizzare l'insaporitore ARIOSTO perchè all'interno della bustina sono presenti le verdure base per il soffritto (carote, sedano, cipolla ecc...) e questo rende il tutto molto veloce e saporito.



INGREDIENTI
Per 4 persone

2 grosse melanzane violette
2 scatole da 400g di polpa di pomodoro
½ cipolla
250g di fontina a fette
100g di prosciutto cotto
parmigiano reggiano
1 insaporitore per salsa di pomodoro ARIOSTO
olio
sale
sale grosso
pangrattato
basilico









PREPARAZIONE

Mondate le melanzane, lavatele, eliminate il picciolo e tagliatele a fette.

Disponetele a strati in uno scolapasta, salando ogni strato con del sale grosso e lasciate perdere acqua per circa 1 ora poi scolatele bene, asciugatele, e friggetele in abbondante olio bollente.
Fatele asciugare su carta assorbente da cucina.
Mentre friggete le melanzane, preparate il sugo.

Per il sugo:

In una padella fate rosolare la cipolla con tre cucchiai di olio e la bustina di ARIOSTO


Unite la polpa di pomodoro, salate, cuocete a fuoco basso per 45 minuti; prima della fine della cottura aggiungete qualche foglia di basilico.

Mettete un velo di pangrattato sul fondo di una pirofila (il pangrattato servirà per “asciugare” il liquido in eccesso della salsa), aggiungete uno strato di sugo, fate uno strato di melanzane fritte, uno di sugo, uno di parmigiano, uno di fontina e uno di prosciutto. Ripetete gli strati indicati, terminate con melanzane, sugo e abbondante parmigiano grattuggiato. Ultimate con una spolverizzata di pangrattato.
Mettete la pirofila in forno caldo a 190° e cuocete la parmigiana per circa mezz'ora.

Servite direttamente dalla pirofila.

INGREDIENTS
Serves 4

2 large eggplant purple
2 400g cans of chopped tomatoes
½ onion
250g fontina cheese, sliced
100g cooked ham
parmesan cheese
Seasonings to tomato sauce 1 ARIOSTO
oil
salt
salt
bread crumbs
basil


PREPARATION

Peel the eggplant, wash and remove the stem and slice them.

Arrange in layers in a colander, salting each layer with coarse salt and let lose water for about 1 hour, then drain well, pat dry and fry in hot oil.
Let them dry on paper towels.
While fry the eggplant, prepare the sauce.

For the sauce:

In a skillet, sauté the onion in three tablespoons of oil and ARIOSTO bag, add the chopped tomatoes, salt and cook over low heat for 45 minutes before the end of cooking add a few leaves of basil.

Put a layer of breadcrumbs on the bottom of a baking dish (the bread crumbs will be used to "dry out" the excess liquid of the sauce), add a layer of sauce, make a layer of fried eggplant, a tomato sauce, one of parmesan, a fontina and a ham. Repeat the layers shown, ending with eggplant, tomato sauce and parmesan cheese. Completed with a sprinkling of breadcrumbs.
Put the pan in a preheated oven at 190 degrees and bake the gratin for about half an hour.
Serve straight from pan.

Il mondo degli aromi e spezie: ZENZERO - GINGER

Lo zenzero è una pianta erbacea perenne, con portamento eretto, che può raggiungere il metro e mezzo di altezza e ha una radice detta rizoma. Annualmente, lo zenzero emette, direttamente dalla radice, uno stelo simile alla canna da zucchero, con foglie strette a forma di lancia. La fioritura è formata da una infiorescenza con l’aspetto di una spiga, composta di fiori bianchi, verde pallido o giallini. Il rizoma viene estratto dopo la fioritura quando la pianta ingiallisce.
L'aroma dello zenzero in generale, è molto gradito e rende particolarmente gustosi dolci e vivande. Il rizoma candito o sciroppato è un dolciume apprezzato sia in Oriente che Occidente. In Estremo Oriente, in particolare in India e nell’area del Sud-Est asiatico, è usato come condimento in molte ricette di curry. Nei paesi anglosassoni entra nella preparazione di birre o di altre bevande fermentate come ad esempio il ginger-ale o di dolci come il pain d’epice, il pane speziato dei paesi nord-europei. Sull’onda della New-Age e delle realtà culturali di comunità provenienti da altri paesi, la conoscenza e la cultura dei cibi etnici, si sta diffondendo anche in Italia. Accade così, che ingredienti "esotici" come lo zenzero, sono apprezzati e vengono adoperati per la preparazione di pietanze tradizionali.

The aroma of ginger in general, is very pleasant and makes it particularly sweet andsavory dishes. The rhizome is a sweet syrup or candy popular in the East and West. In the Far East, particularly in India and Southeast Asia, is used as a condiment in many curryrecipes. In Anglo-Saxon countries entered in the preparation of beer or other fermented beverages such as ginger ale or sweet as the pain of epic, the breads of Northern European countries. In the wake of the New-Age and cultural realities of communities from other countries, knowledge and culture of ethnic foods, is spreading in Italy. It so happensthat ingredients "exotic" as ginger, is appreciated and are used for the preparation oftraditional dishes.
